Sushi Nourish Bowl

Incase you may not have noticed, I’ve been really enjoying posting about Nourish Bowls lately! This recent one came about when I had a craving for sushi, but couldn’t quite be bothered with the rolling and perfection that making sushi sometimes entails! So, I figured, deconstructed sushi must taste just as good- right?! I was correct! This is a new favourite of mine and very versatile if you feel like adding your own sushi ‘fillings!’

Ingredients-

  • 1 cup of sushi rice
  • ½ cup tri color quinoa
  • 1 carrot julienned
  • A dozen snow peas cut diagonally
  • 1 red capsicum julienned
  • 1 avocado cut into cubes
  • Sesame seeds to garnish
  • 2 tablespoons of sauerkraut

Optional-

  • Tahini
  • Miso
  • Lemon
  • Sesame oil

Method-

Combine the rice and quinoa in a rice cooker. Add 2 ½ cups of water and cook until absorbed and ready.

While the rice cooks, chop the vegetables and set them out ready to create you bowl.

Line two bowls with fresh greens such as baby spinach or rocket leaves.

Top each bowl with the rice and quinoa mixture, vegetables and tempeh arranging each new item in a new section in the bowl (see image)

Top with the cubes of avocado, sauerkraut and sesame seeds.

Drizzle with tahini or sesame oil and a touch of lemon.
