Superfood Berry Bliss Balls

I began making these bliss balls for festivals when I was helping to run a healthy little stall that sold Yerba Maté, Superfood Smoothies and Raw Living Food. It was a lot of fun and this became one of the three staple balls that we sold. They are great because not only do they taste amazing, they are full of energy too! A great pick-me-up if you’re feeling a little flat.

Ingredients-

  • 1 cup of almonds
  • ½ cup of hazlenuts
  • ¼ cup soaked apricots
  • ¼ soaked cranberries
  • 1 teaspoon of acai powder
  • 1 teaspoon of Life Tree Organics soluble green yerba maté
  • ½ teaspoon of fresh powdered ginger
  • ¼ cup of soaked dates
  • ¼ cup of  desiccated coconut
  • 2 teaspoons of coconut nectar

Pulse the nuts in a food processor until broken down but still chunky. Add all the other ingredients and process until the mixture comes together and can be rolled into balls. Do not over mix as having some crunch and texture is preferable!

You can roll the balls in desiccated coconut or you can turn goji berries into a bright red fine powder by placing them in a coffee grounder or high speed blender and roll the balls in this!

Yerba-Mate

Yerba mate has been quoted as having the strength of coffee, the health benefits of tea, and the euphoria of chocolate all in one beverage!

The leaves of the mate tree naturally contain 24 vitamins and minerals including vitamins A, C, E, B1, B2, Niacin (B3), B5, B Complex as well as Calcium, Manganese, Iron, Selenium, Potassium, Magnesium, Phosphorus and Zinc. The leaves also contain 15 amino acids, abundant antioxidants and a host of additional compounds and trace minerals. Studies have shown that it is difficult to find any plant in any area of the world equal in nutritional value to yerba mate, which contains practically all of the vitamins necessary to sustain life.
