Sprouted Sunshine Salad

I made this for lunch the other day and my lunch companion exclaimed it tasted like a ‘gourmet waldorf salad!’ Which I guess in some ways it is with the apple, walnuts and celery! It was really just a ‘throw what is in the fridge together’ salad which turned out so lovely I simply had to write it down and share it with you! Often this is exactly how my meals are created! Simple and nourishing.

Ingredients-

  • 6 fresh coz lettuce leaves
  • ½ cup of adzuki beans- cooked or sprouted
  • ½ cup of chickpeas- cooked or sprouted
  • 1 small red capsicum diced
  • 1 small red apple diced
  • 2 tablespoons of curried sunflower seeds
  • 1/2 avocado diced
  • 2 tablespoons of walnuts chopped
  • 3-4 large kale leaves chopped finely
  • 2 celery stalks finely sliced
  • 1/4 bunch of mint finely sliced
  • 2 tablespoons of carrot sauerkraut (or shredded carrot)
  • 1 tablespoon of wood smoked olive oil
  • 1 tablespoon of lemon juice
  • Freshly cracked salt and pepper

Mix everything together (except the coz lettuce leaves) in a large bowl.

Line your two bowls with lettuce leaves and add the salad on top.

Garnish with more mint and curried sunflower seeds.
