Raw Mexican Nourish Bowl

This bowl has a couple of different components, but they are really really easy and simple and when combined, are delicious! I really like the flavours of mexican food, but not so much the heaviness of all the rice, beans, corns and chilli! So this bowl has all the yummy flavours but feels light, fresh and vibrant when you eat it!



Cauliflower Rice-

  • 1/2 a head of cauliflower broken into florets
  • 1/4 red cabbage sliced very thinly
  • 2 tablespoons of chopped coriander
  • 1 tablespoon of chopped mint
  • 1 teaspoon of olive oil
  • 1 teaspoon of lemon juice
  • 1/2 a teaspoon of salt

Pulse the cauliflower in your food processor until it breaks down and resembles couscous or rice in consistency.

Add the olive oil, lemon and salt and process for another 20 seconds or so to mix thoroughly.

Pour the cauliflower mixture into a bowl and stir through the cabbage and herbs.

Set aside while you make the rest of the dishes.

Sprouted Bean Salsa-

  • 1/4 cup of sprouted (or cooked) adzuki beans
  • 1/4 cup of sprouted (or cooked) chickpeas
  • 2 tomatoes finely diced
  • 1 red capsicum finely diced
  • 1 tablespoon of lime juice
  • 1/4 teaspoon of chilli flakes
  • 1/4 teaspoon of cumin powder
  • 1/4 teaspoon of coriander powder
  • A drizzle of coconut nectar
  • A good pinch of salt

Mix all of the ingredients in a bowl so the flavours combine and everything is mixed through. Taste and season according to your liking- you may like more chilli, lime or salt!


  • 1 very ripe large avocado
  • 1-2 tablespoons of lime juice
  • 1/4 teaspoon of salt

Mash the avocado thoroughly so it is very smooth, add the lime and salt and mix well.

Beetroot Molé-

  • 6 sun-dried tomatoes
  • 1 tomato chopped
  • 1/8 teaspoon of cayenne pepper
  • 1 teaspoon of lime juice
  • 1/4 teaspoon of salt
  • 1/2 a ripe avocado
  • 1 small beetroot grated
  • 1/2 teaspoon of cumin
  • 1 teaspoon of raw cacao powder
  • 1 tablespoon of olive oil
  • 1 teaspoon of coconut nectar
  • 1/4 cup of water

Blend all of the ingredients in a high speed blender until completely smooth. Taste and season to your liking.


To build the bowl-

Line 2 bowls with cos lettuce leaves

In half the bowl, add the cauliflower rice.

In the other half of the bowl, add the sprouted bean salsa.

Top with the guacamole and Beetroot Molé Sauce.

Sprinkle with fresh herbs and a squeeze of lime!
