Raw Cauliflower Pilaf with apricots, pistachios and sprouts

I have been wanting to make a raw cauliflower dish for such a long time, and today was the day! When processed in the food processor, the raw cauliflower really does resemble cous cous! This would also be great as a filling for cabbage leaves or collard leaves or even nori rolls. I added a dollop of my Green Pea Hummus on top also and it was delicious!



  • 1 small head of cauliflower
  • Half a dozen dried apricots sliced finely
  • 2 tablespoons of pistachios
  • 2 tablespoons of flaked almonds
  • 1 small capsicum diced
  • ¼ bunch of mint chopped
  • ¼ bunch of parsley chopped
  • ¼ cup of sprouted chickpeas
  • ¼ cup of sprouted adzuki beans
  • 1 small carrot grated
  • ¼ purple cabbage chopped
  • Half a dozen sun dried tomatoes sliced finely
  • 1 stalk of celery sliced finely
  • ¼ bulb of fennel sliced finely
  • 1 lemon juiced
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of cumin powder
  • Freshly cracked salt and pepper

Break the cauliflower into large florets and palce it in your food processor with ½ a teaspoon of salt and 1 teaspoon of olive oil. Process until the cauliflower breaks down and looks like cous cous.

Prepare all the other ingredients and mix everything together in a large bowl.

Serve topped with fresh mint and lemon.
