Rainbow Nourish Bowls

If you were to look at my meals from day to day, these types of bowls would feature more than anything else! I love making bowls like these because not only are they colorful, vibrant and delicious, I also know that my body is getting the full rang of nutrients it needs to thrive-

There is protein in the millet and hemp seeds. Healthy omega fats in the avocado and hemp seeds. Plenty of vitamins, minerals and antioxidants in the carrot, beetroot and tomatoes. Chlorophyll and fiber in the leafy greens. Calcium in the sesame seeds and tahini. And a good hit of probiotics with the sauerkraut!

Feel free to mix and match with what you have in season and what you love. Keep it fresh, colourful and vibrant and you cant go wrong!



  • 1 cup of cooked millet
  • 1 large carrot grated
  • 1 medium beetroot grated
  • 2 roma tomatoes chopped
  • 2 cups of mixed leafy greens
  • ½ a ripe avocado
  • 1 teaspoon of hemp seeds
  • 1 teaspoon of black sesame seeds


  • Olive oil
  • Lemon juice
  • Tahini
  • Fresh herbs


Place the leafy greens into the bottom of two bowls.

Then simply arrange the millet and vegetables around the bowl in sections (see image!)

Add the avocado and top with hemp seeds (power protein combination!)

Scatter the millet with black sesame seeds for contrast (extra calcium too!)

Add the sauerkraut in the center.

Feel free to top with tahini, olive oil, lemon or your favorite herbs.
