Mesquite, Baobab and Banana Smoothie Bowl

Mesquite and Baobab are my two latest superfood addictions! I love them. Mesquite has a rich caramel flavour and is energising and nourishing while Baobab has a light, sweet flavour and is wonderful for digestion, hydration and overall immunity. This smoothie bowl is a perfect morning meal-light yet sustaining and satisfying.

Ingredients-

  • 1 large frozen banana
  • 1 mango cheek
  • 3 soft dried apricots
  • 1/4 of a zucchini peeled (I peel it so the green doesn’t affect the colour!)
  • 1 heaped teaspoon go mesquite powder
  • 1 heaped teaspoon of baobab powder
  • 1 teaspoon of coconut oil
  • 2 teaspoons of puffed amaranth (or you could use soaked and activated buckwheat)
  • 1/4 cup of almond milk

Blend all ingredients until very smooth and creamy.

Pour into a bowl and top with-

  • sliced banana
  • shredded coconut
  • puffed amaranth
  • cubed mango
