Homemade Granola with Cardamom, Raisins and Pecans

This recipe is for my little sister. I keep posting granola recipes that use my dehydrator! So this one uses a good old oven- it is simple, quick and really yummy.  We found a big pecan tree near our house the other week and have a huge jar of shelled pecans to use! They are a little challenging to open, but worth the treasure inside! Of course, you can just buy regular shelled pecans! Feel free to add any other nuts, seeds, dried fruit or spices too.

  • 4 cups rolled oats
  • 1/2 cup almond flakes
  • 1/2 cup chopped raw pecans
  • 1/2 cup flax seeds
  • 1/2 cup pumpkin seeds
  • 1 cup desiccated coconut
  • 1/4 cup coconut nectar
  • 1/4 cup coconut oil
  • 1 tsp ground cinnamon
  • 1 teaspoon of ground cardamom
  • ¼ teaspoon of fresh orange zest
  • 1/4 tsp salt
  • 3/4 cup raisins

Combine all the dry ingredients in a large bowl except for the raisins

Add the coconut nectar and coconut oil and stir well to combine- the mixture should look shiny and evenly coated

Spread out evenly over two lined baking trays

Cook in a moderate oven (180 deegrees) for 15 minutes or until browned- watch it carefully as it can turn from uncooked to black in the blink of an eye!

Allow to cool completely and then store in an airtight container.
