Green Buzz Balls

I love making bless balls, they are such a great snack to keep in the fridge for a late afternoon sweet fix, a simple dessert or even breakfast on the run! These Green Buzz Balls are great because not only are they tasty, they also high in protein, healthy fats and unrefined carbohydrates. These are a great snack to have on hand to keep your creativity a buzz!

  • 1 cup almonds
  • ½ cup pistachios
  • 6 soaked figs
  • ½ cup dates
  • 1 cup coconut
  • 2 tbs bee pollen (optional)
  • 2 teaspoons of green powder
  • 2 tbs lucuma
  • 2 tablespoons honey
  •  2 teaspoons of soluble green mate*

Process the nuts first until they break down slightly, then add the other ingredients and process until mixtures comes together and is sticky but retains some texture.

Form into balls and roll in coconut. Store in the fridge for up to two weeks.

* Green soluble yerba mate is available from Life Tree Organics

If you cant get your hands on the soluble variety just skip this ingredient- course leaves don’t work for this recipe!
