Falafel Nourish Bowl

Building from my original Nourish Bowl recipe, this bowl adds the goodness of homemade falafels to the mix! Adding a source of protein to these bowls makes it a more substantial, whole meal. You can try marinated tempeh or sautéed chickpeas or grilled tofu also. For the falafels, you can find the recipe for them on a previous blog post here. Enjoy!



  • 2 cups of mixed leafy greens
  • 2 roma tomatoes chopped
  • 1-2 celery stalks finely sliced
  • a dozen homemade falafels (see recipe)
  • 2 tablespoons of sauerkraut
  • 2 teaspoons of cashew cheese
  • 1 teaspoon of sesame seeds
  • Lemon and herbs to garnish


  • Hummus
  • Tahini
  • Olives

Arrange the leafy greens at the bottom of 2 bowls and fill with the vegetables- arrange each new item in its own space in the bowl (see image!)

Top with the falafel balls and then add the kraut and cashew cheese.

Top with sesame seeds, lemon and fresh herbs. Add hummus, tahini and olives if you choose!
