Coconut Chia Seed Pudding with plum and pear

Chia seed pudding is by far one of my favourite things to make and eat for breakfast. Its simple, filling and exceptionally nutritious. Chia seeds are a great way to get a good hit of plant-based protein and omega fats, they are a real little powerhouse of nutrition! You can add any seasonal fruit you enjoy, and also your favourite nuts, seeds or dried fruits. You can also make your chia pudding the night before so its ready for you in the morning, and if you do a large batch it will keep 3-4 days in the fridge too.

Ingredients-

  • 3 Tbsp Chia seeds
    1 Cup of coconut milk or almond milk
    1 teaspoon of coconut nectar
    1/2  tsp Cinnamon
    1 teaspoon of vanilla

Topping-

  • 1 pear
  • 1 plum
  • 1 teaspoon of walnuts, cranberries, coconut and pepitas
Mix all of these ingredients together well, I like to use a fork or mini whisk to ensure there are no clumps.

Let the mixture sit for around 20 minutes, stirring every 5 minutes or so. Or you can choose to keep the mix in the refrigerator overnight ready for the morning.After chia has sat and soaked up all the liquid it is ready to go. Add the pudding mixture to a small bowl and decorate with thinly sliced pears and plums and scatter with walnuts, cranberries, flaked coconut and pepitas.
