Carob, Orange and Amaranth Slice

I feel a little uncomfortable saying that something I make is out of this world, but the first bite I took of this I was actually speechless! It really is so good! And so easy too! This is a recipe that anyone can make and everyone will love- kids and adults alike! It needs to stay refrigerated though as I imagine it would melt quickly in the heat. I have used carob because I don’t like the stimulating properties of cacao- but if you’re a chocolate lover feel free to opt the carob for raw cacao powder! I am also going to try switching out the orange zest with peppermint oil- so get creative!



  • ½ cup (125ml) coconut oil
  • 2 tablespoons coconut butter
  • ½ cup carob powder
  • 2 tablespoons coconut nectar
  • pinch of salt
  • 1 cup puffed amaranth
  • ½ cup puffed quinoa
  • ¼ cup cranberries/raisons
  • ¼ cup flaked almonds
  • ¼ teaspoon of orange zest

 Gently melt the coconut oil and coconut butter in a saucepan. Sift and stir in the carob powder and blend in the coconut nectar, salt, orange zest, puffed quinoa and amaranth, cranberries and almonds.

Grease and line a slice pan. Pour the mixture in and chill in the fridge overnight until set. Cut into snack-size bites and enjoy.
