Beetroot, Coconut & Lime Salad

I had a salad like this almost a decade ago in Thailand and I loved it so much I had to find a way to recreate it when I got back home. It is a wonderful summer salad and so quick and easy to make. Although the ingredients sound like a slightly odd combination, they are delicious. This salad is even better a day later when all the flavours have combined even more.



  • 2 large beetroots washed
  • 2 lengths of kale, stem removed
  • 2 tablespoons of dried coconut
  • 2 tablespoons of raisins
  • ¼ cup of mint leaves chopped



  • 3/4 cup coconut milk
  • 1 large lime juiced
  • A good pinch of salt

Grate the beetroots and chop the kale finely and add to a large bowl. Mix together with the coconut, raisons and mint.

Pour in the coconut milk and lime juice and add a good pinch of salt.

Massage the salad together with your hands (wear gloves if you don’t want pink stained hands!) Massaging the salad will help the flavours combine and leaves you with a beautiful pink dressing!

Transfer to two bowls and serve with extra mint, lime and coconut.
