Asian Summer Slaw with apricots, sesame and mint

I love the flavours that combine in this recipe- the fresh mint with the sweet apricots and the asian sesame. Its a perfect summer dish and great for lunch or as dinner with a side of steamed greens, roast potatoes or grilled tempeh. I also love it the next day rolled up in nori or collard leaves!
